【尔湾招聘︱光谱中心精品咖啡甜品烘焙店】 我们正在寻找热爱咖啡、甜品、充满热情的小伙伴加入团队！ *工作地点 Irvine / Orange County 招聘岗位：烘焙师 Head Baker /2 岗位职责 Job Responsibilities 1、生产与品质管理：负责门店后厨及烘焙生产管理（包括搅拌、整形、丹麦、烤炉、馅料及冷加工等环节）， 对产品品质、口感外观、生产效率和出品稳定性负全责。按照配方及标准流程制作高品 质面包、甜品及糕点。 2、计划与成本控制 根据销售预测、历史数据及前场反馈，合理制定每日生产计划与补货节奏，确保产品新 鲜度与供应充足；严格控制原材料用量及库存（遵循先进先出 FIFO），最大程度减少损 耗、控制成本。 3、新店筹备与标准化 深度参与美国新店开业筹备，包括厨房设备调试、生产流程搭建、产品试做及品控标准 的建立；制定并执行产品配方、生产 SOP、出品标准及品质检查流程。 4、部门管理与培训 负责烘焙团队的日常管理，包括人员分工、排班协作、现场调度及团队稳定性建设；建 立培训流程，负责技术教带，持续提升团队整体技术水平。 5、设备维护与食品安全规范 维护烘焙区域设备的日常清洁、保养及安全操作；确保后厨严格符合美国当地食品安全、 卫生检查、温度控制及过敏原管理要求。 1、Oversee back-of-house (BOH) and baking production (including mixing, shaping, Danish, oven, fillings, and cold processing). Take full responsibility for product quality, appearance, taste, production efficiency, and consistency. Prepare high-quality bread, desserts, and pastries in strict accordance with standard recipes. 2、Formulate daily baking plans and replenishment schedules based on sales forecasts, historical data, and front-of-house feedback to guarantee freshness and sufficient supply. Effectively manage ingredient inventory (FIFO) and usage to minimize waste and control food costs. 3、Deeply involve in the preparation of new US store openings, including equipment calibration, workflow setup, product trial runs, and quality control establishment. Develop and execute standard recipes, operational SOPs, presentation standards, and QC protocols. 4、Manage daily BOH operations, including task assignment, scheduling, floor supervision, and team stability construction. Establish training processes and provide technical coaching to continuously upgrade the team’s skills. 5、Maintain the daily cleanliness, routine upkeep, and safe operation of baking equipment. Ensure the BOH strictly complies with local US food safety regulations, health inspections, temperature controls, and allergen management. 岗位要求 Job Requirements 1、经验与背景 具备 3 年以上烘焙/中央厨房生产经验，其中至少 1 年以上主厨、烘焙主管等生产管理经验。西点/ 面包烘焙专业背景者优先；有新店开业、连锁品牌、高产量门店或海外门店经 验者优先。 2、专业技能 具备扎实的烘焙技术能力与产品标准化意识，能够独立判断并解决生产中的技术问题； 熟悉常见烘焙产品制作工艺、全面了解后厨各项设备操作。 3、综合能力 工作细致，具备优秀的生产计划、人员调配、库存管理及损耗控制能力；有较强的时间 管理和现场抗压能力。 4、 食品安全与工作资格 具备合法在美工作资格；熟知美国食品安全及厨房规范，入职后 30 天内能够取得（或已 持有）食品从业人员/食品安全经理资格证（如 ServSafe）。 5、工作时间 能适应早班及弹性工作时间，包括周末及节假日。 1、3+ years of experience in bakery or central kitchen production, with at least 1+ years in a supervisory or head baker role. A professional background/degree in pastry arts or culinary arts is preferred. Experience with new store openings, chain brands, high-volume locations, or overseas stores is a strong plus. 2、Solid baking techniques and a strong mindset for product standardization; capable of independently troubleshooting production issues. Familiar with diverse baking crafts and the operation of standard bakery equipment. 3、Detail-oriented with strong capabilities in production planning, staffing, inventory control, and waste management. Excellent time management and the ability to thrive in a fast-paced environment. 4、Must be legally authorized to work in the United States.
